Oh, don’t worry.. I didn’t go off the deep end and eat a carrot cake! This is a raw vegan snack that I found via EasyToBeRaw.
It is a very simple recipe, all you need is : apple, dates, carrots, cinnamon, a food processor, and a knife.
I put 2 medium carrots (chopped), 6 dates (pitted), and a hefty sprinkling of cinnamon into the food processor. I ran it until the ingredients came together into a spreadable consistency. Mine did not come out nearly as smooth as Megan’s did, but I have an ancient little cuisinart food processor.
Anyway! Next, I sliced up the apple sideways! So that it made thin discs. I flicked out any seeds.
Then, all I did was layer the spread between the discs and stacked them. Sprinkled a little extra cinnamon on top and BAM. Adorable!
This was one tasty snack, let me tell you!! Super, super sweet and dense but also crisp and lively from the apple. I will definitely be making this again.
