I’ve hit an iceberg

I love iceberg lettuce. I can’t help it. I know it’s the least nutritious of all lettuces. But you know what? It’s green and leafy and watery and so, so delicious! Do not judge me!

Those tofu lettuce wraps I made were so phenomenal, I made some more lettuce wraps for dinner last night. I left them a little deconstructed. So it was more of a salad-with-your-hands kind of meal.

Plate : lettuce leaves, 1/2 avocado

Bowl : cabbage mix, sugar snap peas, cilantro lime dressing

Tupper : 3.5oz swordfish steak

Plus the orange & ginger dressing for dunking!

It was crisp, fresh, zesty, messy, and good!

Even with a chaperone, keeping close watch.

Dessert was 2 dates and 2 turkish figs from the market.
I know they look Baby’s First Poop.  But there is nothing in this world tastier than a sweet sweet fig!

Dessert was also supervised…

My neck is feeling much better today. It’s about.. 75% better. There is still some strange and uncomfortable feeling and stiffness there. But the real painful part is gone. Can’t keep me down for long, you dumb body, you!

    I’m not the only one! Praise the lettuce gods! I love iceberg. I have a pet peeve with veins—they should be in circulatory systems, not my salad!

      Ha! Good point about the veins! It is a little creepy :-)
      I am glad we can be iceberg lovers together! I always get “the look” like I am saying I prefer Bieber over Bob Dylan or something. All lettuces are talented in their own way! :-)
